Winter Farmer Salad

A wonderful main dish for sunny winter and early spring days. As written, this makes a huge quantity - adjust accordingly.

What you need

  1. Juice from 1 home grown lemon
  2. 1 clove garlic, grated
  3. 1 tsp dijon mustard
  4. 1/2 tsp agave syrup
  5. 1 tbl apple cider vinegar
  6. 4 tbl extra virgin olive oil
  7. 3 cups chopped iceberg lettuce
  8. 2 cups chopped green cabbage
  9. 2 carrots, very thinly sliced into rounds
  10. 1 1/2 cups chopped broccoli florets
  11. 1/2 cup quartered or sliced red radishes
  12. 1 red apple, quartered and thinly sliced
  13. 1 oz. crumbled gorgonzola cheese (or any cheese you have/prefer)
  14. 3 cups diced cooked ham

How to make it

  1. Combine first six ingredients (dressing)
  2. In a large bowl, combine greens, veggies, apple, ham & cheese
  3. Toss with dressing
  4. Serve with lemon wedges and the bottle of olive oil
