Winter Farmer Salad
A wonderful main dish for sunny winter and early spring days. As written, this makes a huge quantity - adjust accordingly.
What you need
- Juice from 1 home grown lemon
- 1 clove garlic, grated
- 1 tsp dijon mustard
- 1/2 tsp agave syrup
- 1 tbl apple cider vinegar
- 4 tbl extra virgin olive oil
- 3 cups chopped iceberg lettuce
- 2 cups chopped green cabbage
- 2 carrots, very thinly sliced into rounds
- 1 1/2 cups chopped broccoli florets
- 1/2 cup quartered or sliced red radishes
- 1 red apple, quartered and thinly sliced
- 1 oz. crumbled gorgonzola cheese (or any cheese you have/prefer)
- 3 cups diced cooked ham
How to make it
- Combine first six ingredients (dressing)
- In a large bowl, combine greens, veggies, apple, ham & cheese
- Toss with dressing
- Serve with lemon wedges and the bottle of olive oil
