Zucchini Linquica Skillet
I love to use the larger summer zucchini in
highly seasoned dishes. They have more flavor. I use the 3 inch
diameter ones and scoop out the seeds.
What you need
- 1 Package Silva Portugese Linguica
- 1 large zucchini, seeds removed and cut into 1/2 inch wide pieces
- Olive Oil
- Salt & Pepper
- 1 tsp smoked paprika (optional)
How to make it
- Prepare zucchini and set aside
- Slice linguica into 1/4 inch thick slices
- Heat 1-2 tsp olive oil in a large skillet
- Sauté linguica over medium on both sides until well caramelized
- Remove linguica pieces, leaving seasoned oil in pan
- Increase heat to medium-high and add zucchini
- Sprinkle with smoked paprika
- Sauté zucchini until lightly browned
- Return linguica to pan, reduce heat to medium-low and cover
- Cook until zucchini is tender, but not too soft
