Zucchini Linquica Skillet

I love to use the larger summer zucchini in highly seasoned dishes. They have more flavor. I use the 3 inch diameter ones and scoop out the seeds.

What you need

  1. 1 Package Silva Portugese Linguica
  2. 1 large zucchini, seeds removed and cut into 1/2 inch wide pieces
  3. Olive Oil
  4. Salt & Pepper
  5. 1 tsp smoked paprika (optional)

How to make it

  1. Prepare zucchini and set aside
  2. Slice linguica into 1/4 inch thick slices
  3. Heat 1-2 tsp olive oil in a large skillet
  4. Sauté linguica over medium on both sides until well caramelized
  5. Remove linguica pieces, leaving seasoned oil in pan
  6. Increase heat to medium-high and add zucchini
  7. Sprinkle with smoked paprika
  8. Sauté zucchini until lightly browned
  9. Return linguica to pan, reduce heat to medium-low and cover
  10. Cook until zucchini is tender, but not too soft
