Zucchini Shells

  • Preheat oven to 350-375
  • Wash zucchini and trim stem end, but do not cut off ends (you are making an edible vessel)
  • Scoop out seeds, leaving about 1/3-1/2 inch of flesh at sides
  • Fill zucchini halves with meat mixture
  • Place into a baking dish and pour chicken broth around edges
  • Bake about 30-40 minutes until zucchini is tender

    You can also use a recipe of Turkey & Spinach Meatloaf or your favorite meatloaf or meatball recipe, but you will need to increase the cooking time - cook until meat filling is well done (approx. 1 hour, but test with meat thermometer to be certain).
