Zucchini Shells

1 - 3 inch diameter zucchini, or a few smaller
1 cup chicken broth or water
1 recipe
Lamb topping for Turkish Pizza
- Preheat oven to 350-375
- Wash zucchini and trim stem end, but do not cut off ends
(you are making an edible vessel)
- Scoop out seeds, leaving about 1/3-1/2 inch of flesh at
sides
- Fill zucchini halves with meat mixture
- Place into a baking dish and pour chicken broth around
edges
- Bake about 30-40 minutes until zucchini is tender
You can also use a recipe of
Turkey &
Spinach Meatloaf or your favorite meatloaf or meatball recipe, but you
will need to increase the cooking time - cook until meat filling is well
done (approx. 1 hour, but test with meat thermometer to be certain).
