Zucchini Shells

What you need

  1. One 3 inch diameter zucchini, or a few smaller
  2. 1 cup chicken broth or water
  3. 1 recipe Lamb topping for Turkish Pizza or any filling you like

How to make it

  1. Preheat oven to 350-375º
  2. Wash zucchini and trim stem end, but do not cut off ends (you are making an edible vessel)
  3. Scoop out seeds, leaving about 1/3-1/2 inch of flesh at sides
  4. Fill zucchini halves with filling mixture
  5. Place into a baking dish and pour chicken broth around edges
  6. Bake about 30-40 minutes until zucchini is tender

You can also use a recipe of Turkey & Spinach Meatloaf or your favorite meatloaf or meatball recipe, but you will need to increase the cooking time - cook until meat filling is well done (approx. 1 hour, but test with meat thermometer to be certain).
