Baked Kohlrabi Chips

What you need

  1. 2 medium kohlrabi, peeled and sliced very thin on a mandoline
  2. Olive Oil
  3. Kosher salt & Fresh black pepper

How to make it

  1. Preheat oven to 375º
  2. Spray or brush lightly with oil 2 baking trays
  3. Spread kohlrabi slices in a single layer on the trays
  4. Spray or lightly brush tops of each slice with oil
  5. Bake turning once until chips are beginning to brown around the edges

These cook to about the same texture as sweet potato chips
