Vegetable Side Dishes

There are some genuine benefits to reducing the amount of meat we consume; cost to the planet, cost to our wallets and the disastrous factory farming industry based on our desire for 'affordable' meat products.

We're now doing vegetarian dinners a couple of nights during the week. We're finding ways to stay on our low GI plan and still enjoy terrific flavor. Some of our favorites are: Lentils with Almonds, Spaghetti Squash with Tomato Cream Sauce and Stuffed Poblanos. But a meat free meal can be as simple as a salad with a couple of fresh vegetables along side. It's all about thinking outside our box, and making the most flavorful main or side dishes.
