Cauliflower Mash

This is a fun and healthier alternative to mashed potatoes. You could use a food processor and create a more similar consistency to mashed potatoes, but we love it just mashed with a hand masher. Yumm!

What you need

  1. 1 head cauliflower, leaves and core removed, broken into large florets
  2. 1 cup chicken broth
  3. 2 tbl olive oil
  4. 1 cup grated parmesan or romano cheese
  5. Milk or broth to adjust consistency
  6. Kosher salt and black pepper

How to make it

  1. In a pot, place chicken broth and cauliflower
  2. Bring broth to a boil, cover pot and cook until cauliflower is very tender
  3. Turn off heat, add olive oil and using a potato masher, mash together
  4. Add cheese and taste to adjust salt & pepper
  5. If desired, use additional broth or milk to adjust consistency
