Cheese Stuffed Zucchini
What you need
- 2 - 4 zucchini (small to medium), cut in half lengthwise
- 1/2 cup grated cheddar cheese (or more if needed)
- 1/4 cup cottage cheese
- 2 Tablespoons to 1/4 cup grated romano cheese
- Salt
- Black pepper
How to make it
- Scoop out about a 1/4 inch declivity down the middle of the zucchini for the cheese to melt
- Lightly salt the prepared zucchini bases
- Blend the cheeses with some black pepper
- Divide the cheese mixture between the zucchini, mounding it slightly, but gently pressing it in
- Bake at 400º for 15-20 minutes until the cheese has melted and is beginning to brown
The cheese should be a topping to accent the zucchini, rather than a filling.
