Cheese Stuffed Zucchini

What you need

  1. 2 - 4 zucchini (small to medium), cut in half lengthwise
  2. 1/2 cup grated cheddar cheese (or more if needed)
  3. 1/4 cup cottage cheese
  4. 2 Tablespoons to 1/4 cup grated romano cheese
  5. Salt
  6. Black pepper

How to make it

  1. Scoop out about a 1/4 inch declivity down the middle of the zucchini for the cheese to melt
  2. Lightly salt the prepared zucchini bases
  3. Blend the cheeses with some black pepper
  4. Divide the cheese mixture between the zucchini, mounding it slightly, but gently pressing it in
  5. Bake at 400º for 15-20 minutes until the cheese has melted and is beginning to brown

The cheese should be a topping to accent the zucchini, rather than a filling.
