Braised Artichoke Hearts

Artichokes are a very healthy food, although they take time to prepare and can be somewhat messy to eat whole. On the other hand, artichoke hearts can be purchased frozen or canned and even though processed, still are very healthy. Artichokes are a liver/kidney tonic as well as being full of fiber.

The dairy in this recipe can be left out. When we entertain, I often have leftover cheese and cream that I hate to throw out. This is a great dish to use some of that up, but still has amazing flavor without.

What you need

  1. 1 pkg frozen artichoke hearts
  2. 1 cup chicken broth
  3. 1 slice bacon
  4. 1 clove garlic
  5. Pinch saffron
  6. 8-10 grape tomatoes
  7. 1/8-1/4 cup cream (optional)
  8. 1/4 cup grated cheese (optional)
  9. Fresh herb
  10. Fresh ground black pepper

How to make it

  1. Slice the bacon into 1/4 inch pieces - render and crisp in a sauté pan until browned
  2. Add minced or grated garlic and stir to coat well with bacon fat - cook about 30 seconds
  3. Add chicken broth, saffron and pepper
  4. Add artichoke hearts and bring sauce to a low boil
  5. Cook until artichokes are tender and sauce has reduced by half
  6. Add cream if using and cherry tomatoes
  7. Continue cooking until cherry tomatoes are hot and sauce is lightly thickened
  8. Remove from heat and add cheese if using, and fresh herb

With the bacon and cheese you most likely do not need salt, but taste to be sure. We just had this with a roast turkey breast and used the sauce on the turkey. Yumm.
