Peas with Shallot & Mint

What you need

  1. 3 cups fresh english peas
  2. 1 large shallot, minced
  3. 1/4 cup fresh mint, minced
  4. Kosher salt & fresh pepper
  5. Olive oil

How to make it

  • Cook peas in boiling water for about 3-4 minutes
  • While peas cook, heat oil in a skillet and sauté shallot until translucent over medium heat
  • Add peas when cooked and continue cooking for about 1-2 minutes
  • Remove from heat and place in a warm serving dish
  • Mix in mint and add salt & pepper to taste
