Peas with Shallot & Mint
What you need
- 3 cups fresh english peas
- 1 large shallot, minced
- 1/4 cup fresh mint, minced
- Kosher salt & fresh pepper
- Olive oil
How to make it
Cook peas in boiling water for about 3-4 minutes
While peas cook, heat oil in a skillet and sauté shallot until
translucent over medium heat
Add peas when cooked and continue cooking for about 1-2 minutes
Remove from heat and place in a warm serving dish
Mix in mint and add salt & pepper to taste
