Roasted Baby Beets

I confess these aren't always easy to find, but when you run across them, they make a wonderful dish. They even make a good appetizer or party food.

What you need

  1. Baby beets
  2. Olive Oil
  3. Kosher Salt & Black Pepper

How to make it

  1. Preheat oven to 375º
  2. Trim the root end of the beets and also the tops, leaving about 2 inches or so of the stems on top.
  3. Scrub well and dry
  4. Place beets on a foil lined baking sheet and drizzle with olive oil
  5. Using your hands, mix the beets and oil together, coating the beets well
  6. Spread out into a single layer and sprinkle with salt & Pepper
  7. Roast beets until a knife pierces to the center easily
  8. Remove and allow to cool slightly

You can peel the beets at this point, but the skins aren't typically tough, so I usually leave them and serve. If serving as an appetizer, you can whip up a nice vinaigrette to dip them.
