Chipotle Lentils with Peaches & Basil
Surprisingly delicious combination!
What you need
- 1 cup french lentils
- 2 1/2 cups vegetable or chicken broth
- 1/2 tsp ground chipotle powder
- 1 clove garlic, minced
- 2-3 peaches, peeled, pitted and chopped
- Fresh basil leaves
- Kosher salt to taste
How to make it
- Rinse lentils
- Add chipotle and garlic to broth
- Bring broth to a boil - add lentils, cover and cook over medium low for 20 minutes
- Uncover and continue to cook until most of the broth has been absorbed and the lentils are just tender
- Taste and add salt if needed
- Turn off heat and add peaches
- Stir and let peaches cook briefly in the hot lentils
- Tear basil leaves into the pan and serve
