Lentils with Figs and Almonds

This is not a sweet dish, despite the figs. It's very savory and comforting. The combination of figs, scallion and lemon is excellent.

What you need

  1. 3/4 - 1 cup brown lentils
  2. 1 small onion, chopped
  3. 1 large garlic clove, minced
  4. 1/2 cup whole raw almonds, chopped
  5. 1/2 cup dried black figs, chopped (not too small)
  6. 1 tsp minced fresh parsley leaves or 1/2 tsp dried
  7. 1 fresh bay leaf
  8. 3/4 - 1 tsp sea salt
  9. 2 cups water
  10. Sliced scallion (green part)
  11. Lemon wedges
  12. Olive oil

How to make it

  1. Heat oil in a medium saucepan over medium heat
  2. Add onion and salt and cook until translucent
  3. Add garlic and almonds and cook, stirring until almonds take on a little color
  4. Add parsley, bay leaf, figs, lentils and water
  5. Bring to a boil, cover and reduce heat to low
  6. Cover and cook for about 30 minutes or until lentils are just tender
  7. If there's still liquid uncover and continue cooking over medium low until it cooks off
  8. Ladel into bowls and garnish with scallions and a squeeze of lemon juice
