Lentils with Figs and Almonds
This is not a sweet dish, despite the figs. It's very savory and comforting. The combination of figs, scallion and lemon is excellent.
What you need
- 3/4 - 1 cup brown lentils
- 1 small onion, chopped
- 1 large garlic clove, minced
- 1/2 cup whole raw almonds, chopped
- 1/2 cup dried black figs, chopped (not too small)
- 1 tsp minced fresh parsley leaves or 1/2 tsp dried
- 1 fresh bay leaf
- 3/4 - 1 tsp sea salt
- 2 cups water
- Sliced scallion (green part)
- Lemon wedges
- Olive oil
How to make it
- Heat oil in a medium saucepan over medium heat
- Add onion and salt and cook until translucent
- Add garlic and almonds and cook, stirring until almonds take on a little color
- Add parsley, bay leaf, figs, lentils and water
- Bring to a boil, cover and reduce heat to low
- Cover and cook for about 30 minutes or until lentils are just tender
- If there's still liquid uncover and continue cooking over medium low until it cooks off
- Ladel into bowls and garnish with scallions and a squeeze of lemon juice
