Summer Green Beans

The first year we grew green beans I was surprised at how well they did. In fact we frequently had enough to make an entire supper of green beans.

What you need

  1. Large bowl or basket freshly picked green beans (1 1/2 - 2 lbs?)
  2. Olive Oil
  3. Soy bean margarine
  4. a few peeled and bruised garlic cloves
  5. 1 tsp or more crushed red pepper flakes
  6. a couple handfuls (1 - 1 1/2 cups) whole cherry tomatoes from the garden
  7. Kosher Salt and freshly ground Black Pepper

How to make it

  1. Trim and wash beans.
  2. In Sauté pan, melt margarine in olive oil.
  3. Add garlic and red pepper flakes and simmer for several minutes.
  4. Add beans and turn until coated with the oil/margarine.
  5. Cover and cook over medium heat until beans are nearly tender.
  6. Add tomatoes and finish cooking beans.
  7. Discard garlic and add salt and pepper.
