Sautéed Corn

I created this simple dish when I wanted something lighter than the traditional heavy sides often served with pulled pork. It's delicious and a perfect compliment to the spicy sauce and smokey meat.

What you need

  1. 1 lb. pkg frozen corn, thawed, but not drained
  2. 1 large clove garlic, minced
  3. 1 tbl fresh oregano leaves, minced
  4. 1 tbl fresh parsley leaves, minced
  5. Fresh ground black pepper
  6. Olive oil

How to make it

  1. Heat olive oil over medium heat
  2. Add corn and let cook about 2-3 minutes
  3. Add garlic, oregano and parsley, cover and let simmer until corn is cooked (about 3-5 minutes more)
  4. Remove cover and increase heat to evaporate any residual moisture and allow the corn to brown lightly, stirring constantly to prevent sticking
  5. Remove to a warm bowl, stir in black pepper and serve hot
