Sautéed Corn
I created this simple dish when I wanted something lighter than the traditional heavy sides often served with pulled pork. It's delicious and a perfect compliment to the spicy sauce and smokey meat.
What you need
- 1 lb. pkg frozen corn, thawed, but not drained
- 1 large clove garlic, minced
- 1 tbl fresh oregano leaves, minced
- 1 tbl fresh parsley leaves, minced
- Fresh ground black pepper
- Olive oil
How to make it
- Heat olive oil over medium heat
- Add corn and let cook about 2-3 minutes
- Add garlic, oregano and parsley, cover and let simmer until corn is cooked (about 3-5 minutes more)
- Remove cover and increase heat to evaporate any residual moisture and allow the corn to brown lightly, stirring constantly to prevent sticking
- Remove to a warm bowl, stir in black pepper and serve hot
