Onion Bhaji's

What you need

  1. 1 cup besan flour
  2. 1 tsp baking soda
  3. 2 Tbl chopped cilantro
  4. 2-3 onions, halved and sliced
  5. (optional) 1 tsp each ground coriander, garam masala, turmeric, chili powder
  6. 1 - 1 1/4 cup cold water
  7. Vegetable Oil
  8. Salt & Pepper

How to make it

  1. Blend flour, soda and 1/2 tsp kosher salt in a mixing bowl
  2. Add spices and cilantro
  3. Add the onion slices and coat well with the flour/spice mixture
  4. Add about 1 cup of the cold water to blend into a paste like consistency
  5. Heat oil to about 350º
  6. Spoon by Tablespoon several at a time, into the oil and cook for 3-4 minutes until browned and cooked through
  7. Drain on a rack and keep warm

This can be served with seasoned yogurt as a sauce.
