Leeks

This can be done with leeks alone or you can include spring onions and/or green garlic. Great as a side dish to meat or even pasta.

What you need

  1. 2 medium leeks, cut in half and sliced across
  2. Spring onions, sliced (optional)
  3. Green garlic, thinly sliced (optional)
  4. Olive oil
  5. Butter
  6. Kosher salt
  7. Black pepper

How to make it

  1. Clean leeks well and dry
  2. Slice onion and garlic if using
  3. Heat a skillet with olive oil over medium heat
  4. Add sliced leeks/onions and 1/2 tsp kosher salt
  5. Sauté until leeks are tender and are just starting to color
  6. Remove from heat and add butter, additional salt & pepper to taste
