Leeks
This can be done with leeks alone or you can include spring onions and/or green garlic. Great as a side dish to meat or even pasta.
What you need
- 2 medium leeks, cut in half and sliced across
- Spring onions, sliced (optional)
- Green garlic, thinly sliced (optional)
- Olive oil
- Butter
- Kosher salt
- Black pepper
How to make it
- Clean leeks well and dry
- Slice onion and garlic if using
- Heat a skillet with olive oil over medium heat
- Add sliced leeks/onions and 1/2 tsp kosher salt
- Sauté until leeks are tender and are just starting to color
- Remove from heat and add butter, additional salt & pepper to taste
