Kohlrabi Sweet Potato Fry

This is a great side dish with steak or chops, but also a terrific alternative to breakfast/brunch potatoes.

What you need

  1. Olive Oil
  2. Bacon fat (skip for a Vegan/Vegetarian dish)
  3. 1 medium sweet potato, peeled and diced
  4. 2 small kohlrabi, peeled and diced
  5. 3 scallion sliced on an angle
  6. Kosher salt & black pepper

How to make it

  1. Heat about 3-4 tablespoons fat in a 9-10 inch cast iron skillet or non-stick skillet over medium heat
  2. Add kohlrabi first as it takes a few minutes longer to cook - about 3-5 minutes
  3. Add sweet potatoes, salt & pepper and increase heat to medium-high
  4. Cook, stirring occasionally until potatoes and kohlrabi are browning and crisp on all sides
  5. Add scallion and cook until fragrant
