Kohlrabi Sweet Potato Fry
This is a great side dish with steak or chops, but also a terrific alternative to breakfast/brunch potatoes.
What you need
- Olive Oil
- Bacon fat (skip for a Vegan/Vegetarian dish)
- 1 medium sweet potato, peeled and diced
- 2 small kohlrabi, peeled and diced
- 3 scallion sliced on an angle
- Kosher salt & black pepper
How to make it
- Heat about 3-4 tablespoons fat in a 9-10 inch cast iron skillet or non-stick skillet over medium heat
- Add kohlrabi first as it takes a few minutes longer to cook - about 3-5 minutes
- Add sweet potatoes, salt & pepper and increase heat to medium-high
- Cook, stirring occasionally until potatoes and kohlrabi are browning and crisp on all sides
- Add scallion and cook until fragrant
