Baked Spinach

What you need
- 1 1/4 lb. spinach
- 1/4 cup flour
- 3 eggs, beaten
- 3/4 cup cheddar cheese, shredded
- 1/2 cup dried bread crumbs
- 2 Tbl. fresh parsley, chopped (optional)
- 1/4 cup melted butter
- 1 cup milk
- 1/2 tsp. salt
- 1/8 tsp. ground black pepper
- Parmesan cheese, grated
How to make it
- Preheat oven to 350º
- Grease a 2 quart baking dish
- Clean spinach thoroughly, remove excess water and chop.
- Layer spinach, flour, egg (& extra grated parmesan if desired). Repeat.
- Combine cheese, bread crumbs and parsley and sprinkle over top.
- Mix butter, milk, salt & pepper and pour over top.
- Bake for 50 - 60 minutes.
