Cauliflower Gratin

A great way to low carb, lower fat comfort!

What you need

  1. 1 head cauliflower, leaves and core removed, broken into large florets
  2. 1 cup nonfat plain yogurt
  3. 1 cup grated dubliner cheese
  4. 1 tbl dijon mustard
  5. 1 tsp gound paprika
  6. 1 tsp kosher salt

How to make it

  1. Steam cauliflower florets in a steamer basket sprinkled with 1/2 tsp kosher salt until just tender
  2. Arrange in a broiler safe gratin dish and cool to room temperature or slightly warmer
  3. Combine yogurt, cheese, mustard, pakrika and 1/2 tsp kosher salt
  4. Spoon yogurt mixture over top of cauliflower, spreading to cover all surfaces
  5. Broil for approx. 5 minutes about 6-8 inches from the broiler element until top is bubbly and cheese has melted (rotate once to get even exposure)
