Baked Tilapia with Lime and Cilantro Pesto

What you need

  1. 1 lb. tilapia fillets
  2. Zest and juice from two limes
  3. 1 large clove garlic, minced
  4. 1/2 tsp salt
  5. 1/4-1/2 tsp cayenne pepper
  6. 1/4 cup very finely minced fresh cilantro leaves
  7. 1-2 tbl olive oil

How to make it

  1. Preheat oven to 350º
  2. Pat fillets dry with paper towels
  3. Combine remaining ingredients to form a paste (pesto)
  4. Brush about 1 tbl of the cilantro pesto over the bottom of a baking dish
  5. Place dry fillets in baking dish in a single layer
  6. Pour remaining pesto over the fillets and rub or brush to cover
  7. Cover pan with foil
  8. Bake for 20-30 minutes until done to your taste
