Baked Salmon & Mushrooms
What you need
- 1/2 - 1 lb. fresh crimini mushrooms
- 1/2 onion sliced or chopped
- Olive Oil or butter for sauteing
- 2 lbs. Salmon fillets
- Salt & Pepper
- 1/4 cup melted butter or other flavorful fat
- 2 tbl Lemon Juice
How to make it
- Saute mushrooms and onion in olive oil or butter
- Butter a baking dish large enough to lay salmon fillets flat in a single layer
- Sprinkle salmon on both sides with salt & pepper and lay into greased baking dish
- Spread the sauted mushrooms & onions over the top of the salmon
- Combine the melted butter and lemon juice and pour over the top
- Bake in a preheated 350 oven for 30 - 35 minutes or until the fish flakes
