Baked Salmon & Mushrooms

What you need

  1. 1/2 - 1 lb. fresh crimini mushrooms
  2. 1/2 onion sliced or chopped
  3. Olive Oil or butter for sauteing
  4. 2 lbs. Salmon fillets
  5. Salt & Pepper
  6. 1/4 cup melted butter or other flavorful fat
  7. 2 tbl Lemon Juice

How to make it

  1. Saute mushrooms and onion in olive oil or butter
  2. Butter a baking dish large enough to lay salmon fillets flat in a single layer
  3. Sprinkle salmon on both sides with salt & pepper and lay into greased baking dish
  4. Spread the sauted mushrooms & onions over the top of the salmon
  5. Combine the melted butter and lemon juice and pour over the top
  6. Bake in a preheated 350 oven for 30 - 35 minutes or until the fish flakes
