Bananas Foster Trifle
This is very versatile and a great way to use leftovers and ripe
bananas. Try it with Lemond
Curd instead of the Quick
Vanilla Pudding and any type of leftover cookie or cake will
work beautifully.
Serves 2.
What you need
- 2 very ripe bananas
- Lemon juice
- Double recipe for Quick Vanilla Pudding
- 6 leftover 2 inch cookies (I use Chocolate Espresso cookies)
- 2-3 tablespoons good quality rum
- 2 stemmed glasses (about 6 oz. size)
- Thin lemon slices or mint for garnish
How to make it
- Place cookies on a plate and sprinkle with rum - let stand about 15
minutes until rum is soaked up
- Slice bananas and add lemon juice to prevent browning
- Place one soaked cookie in base of a stemmed glass
- Place about one tablespoon of vanilla pudding on top
- Top with 1/4 of the banana slices
- Add vanilla pudding to cover the bananas
- Break up 2 more soaked cookies and place them over the pudding
- Add 1/4 of the sliced bananas (you will have used half the bananas now)
- Spread a layer of pudding over the bananas and garnish with a thin
slice of lemon or a sprig of mint or both
- Repeat with remaining ingredients in second glass
- Chill and serve
