Barbequed Pork Babyback Ribs
I prefer to use applewood for pork, but any fruitwood is good. This recipe will serve 4-6 people with a couple of side dishes.

What you need
- 2 racks pork babyback ribs - 2 to 2.5 lbs each
- 1 recipe Dry
Rub or use your favorite seasonings
- 1 recipe BBQ Sauce of your choice
How to make it
- Rub ribs thoroughly with dry rub and allow to stand at room temperature while you start the coals and soak the wood you've chosen for smoke
- When coals are ready, place
smoking wood on top. Place rack over and put rib racks directly onto grill rack.
- Cover and slow cook about 1 hour per pound of ribs.
- About 20 minutes before you will take the ribs off the smoker, preheat your oven to 250 degrees.
- Remove ribs and wrap in heavy duty foil
- Turn off your oven and place wrapped ribs inside for about 2 hours.
- Using a very sharp knife, cut between the bones to separate ribs.
You can shortcut by leaving ribs only 1 hour in the oven.
