Ground Beef Chili

This recipe doesn't include any beans and is absolutely rich and filling without them! Serves four.

What you need

  1. 2 lbs. ground chuck (80/20)
  2. 1 large onion, finely diced
  3. 1 medium red bell pepper, finely diced
  4. 1 carrot, finely diced
  5. 2 stalks celery, finely diced
  6. 2 large jalapeno peppers, seeds and membrane removed and minced
  7. 4 large cloves garlic, minced
  8. 4 tbl ancho chili powder
  9. 2 1/2 - 3 tsp ground cumin
  10. 1 tsp ground coriander
  11. 1/2 tsp ground chipotle or 1 chipotle in adobo, minced
  12. 1 12oz bottle beer (any kind as long as you like it)
  13. 1 28oz can tomatoes in juice or sauce, chopped
  14. Salt to taste
  15. Garnishes: grated cheese, minced onion, chopped parsley or cilantro

How to make it

  1. Brown ground beef with 1/2 tsp salt in a large pot over high heat until no longer pink
  2. Reduce heat to medium-high and add onion, bell pepper, carrot, celery and jalapeno with 1/2 tsp salt - cook until vegetables are tender
  3. Reduce heat to medium and add garlic and dried spices - cook for 2-3 minutes until fragrant
  4. Add beer and tomatoes with juice/sauce, reduce heat to simmer, cover and cook for one hour, stirring occasionally
  5. Taste and adjust salt and spices - continue cooking for 20-30 minutes until beef is extremely tender and flavors are blended
  6. Serve hot with garnishes

Alternate: Use 1 can tomato paste, 4 cups water and 1 cup wine instead of the tomatoes and beer. Add tomato paste with garlic and spices.
