Beef Carpaccio with Blackberry Sauce

What you need

  1. 1 beef tenderloin prepared according to the Updated Carpaccio recipe - do not add toppings
  2. 1 recipe Blackberry Sauce
  3. Caramelized onions
  4. 2 tbl chopped chives
  5. Fresh baby spinach leaves
  6. Coarse Kosher salt
  7. Fresh ground black pepper
  8. »«Blackberry Sauce»«
  9. 1 pkg frozen blackberries, thawed
  10. 2 cups beef or chicken broth
  11. 1 tbl minced rosemary, thyme or winter savory
  12. 1 clove garlic, minced
  13. 1 large shallot, minced
  14. 1 tsp worchestershire sauce
  15. Kosher salt

How to make it

Blackberry Sauce

  1. In a sauté pan, caramelize minced shallot
  2. Add garlic and herb
  3. Add 1 cup blackberries, broth and worcestershire sauce
  4. Simmer until reduced and thickened - this will take some time but you don't want a runny sauce
  5. Taste and add salt as needed

Assembly

  1. On a large decorative platter, make a sparse layer of baby spinach leaves
  2. place slices of carpaccio over the top
  3. Spoon or drizzle sauce randomly over all
  4. Place some spinach leaves decoratively over top
  5. Add bits of caramelized onion - each slice of beef should have a small amount of everything
  6. Sprinkle top with chives and kosher salt

This is a wonderful buffet item as it is served at room temperature and easy to take small portions.
