Bruschetta Soup

Another great recipe for using up leftover party food.

What you need

  1. 4 cups chopped tomato or 4 cups oven roasted roma tomatoes
  2. 4 cups chicken broth
  3. 2 cups diced toasted baguette slices or substitute crouton cubes
  4. 1 tsp dried italian seasoning (optional)
  5. Fresh basil leaves to taste
  6. Grated parmesan or romano cheese (optional)

How to make it

  1. Heat tomatoes in a soup pot - add dry seasoning if using
  2. Add chicken broth and bring to a low boil
  3. Cook over medium low heat for 20 - 30 minutes
  4. Add bread cubes and continue cooking for another 15 minutes.
  5. Turn off heat and ladle into soup bowls
  6. Tear fresh basil over soup and top with grated cheese if desired.
