Chili con Carne

1 lb ground beef
1 green pepper
2 onions
5-6 stalks celery
3 cloves garlic, chopped
1 28 oz. can crushed tomatoes
1 can diced tomato
2 cans black beans, drained and rinsed
3 cups frozen corn
3 cups or more beef broth
1 tsp hot red pepper flakes
3 tbl chili powder
1 tsp cumin
3 tsp salt
Black pepper
  • Brown ground beef until brown, cutting into very small pieces as it browns.ð Add Pepper. ð Remove from pan and set aside.
  • Chop onions, celery and green pepper and saut» until soft.ð
  • Add garlic, sauté 1 to 2 min.
  • Add the hamburger, Crushed tomato, pepper flakes, Chile powder, Cumin, and Salt.
  • Add diced tomato,ð black beans,ð frozen corn and beef brothð
  • Cook ingredients together on low heat for 10 minutes.ð Turn of heat and let sit covered until cool.ð
  • Refrigerate until the next day.ð
  • Reheat slowly and serve with a dallop of sour cream chopped shallots and grated cheddar cheese.
