Kathy's Corned Beef

What you need

  1. 2 corned beef briskets
  2. 1 head cabbage
  3. 3 onions
  4. 2 tbl apple cider vinegar
  5. 25 peppercorns
  6. 5 whole cloves
  7. 6 stalks celery
  8. 6 carrots
  9. 4 - 5 potatoes
  10. butter

How to make it

  1. Using large kettle Cover corned beef with water and bring to boil
  2. Boil for 15 minutes and discard water and rinse corned beef - This takes the salt away
  3. Cover corned beef with fresh water
  4. Add onions cut into large pieces, apple cider vinegar, peppercorns and cloves
  5. Simmer for 3 hours
  6. Add celery, carrots and potatoes, quartered
  7. The last 15 minutes of cooking add cabbage
  8. Remove Corned beef and slice
  9. Remove vegetables, add butter
