Domestic duck, whole or breast is sold at farmer's markets as well as seasonally in most supermarkets. Those from the farmer's market are probably a best choice and those from supermarkets generally come with a packet for making an orange sauce. Either way, to prep a whole duck, remove all packaging and neck and giblets from the cavity. If there's a pop-up timer, remove that as well. The liver I save along with chicken livers in a tub in the freezer. Use paper towels or dish cloth to dry the duck well.
