Dukkah

A nut/seed/spice blend of the middle east served with flatbread. Bread is dipped in olive oil and then the dukkah. You can use any combination of nuts, seeds and spices you like.

What you need

  1. 1/2 cup raw almonds
  2. 2 Tbl sesame seeds
  3. 1-2 Tbl coriander seeds
  4. 1 tsp cumin seeds
  5. 1/4 - 1/2 tsp fennel seeds
  6. 3-4 black peppercorns
  7. 1 tsp ground aleppo pepper or other chili
  8. 1/4 tsp gray or other non-iodized salt

How to make it

  1. Toast almonds in a dry skillet over medium-low until just turning brown
  2. Add to a food processor and pulse once or twice to break up
  3. Toast whole seeds in the skillet until they begin to pop
  4. Turn off heat and add aleppo pepper
  5. Pour into food processor with almonds and pulse to a coarse grind
  6. Serve with olive oil and flatbread or french bread
