Fish Tacos

What you need

  1. 4 - 6 corn tortillas
  2. 1/2 - 3/4 lb. fish (snapper or ling cod)
  3. flour
  4. bread crumbs (fresh is best)
  5. 2 eggs, beaten
  6. frying oil
  7. 1/2 tsp. salt
  8. 1/2 cup grated cheese
  9. 2 limes

How to make it

  1. Rinse and dry fish, cut into chunky strips.
  2. Roll in flour, dip in egg, roll in crumbs.
  3. Fry until golden brown. Set aside in a warm oven on a paper towel.
  4. Heat a griddle, season with oil. Place tortilla on griddle, cheese on tortillas, 1 - 2 pieces of fish
  5. Fold over until cheese melts and tortilla gets crispy.
  6. Serve with a squeeze of lime and a good hot sauce or salsa.
