Fava Beans with Lamb & Rice

This is simply seasoned and a very delightful one pot meal. 1 lb. fava pods = approx. 3/4 cup beans.

What you need

  1. Olive Oil
  2. 1 pound ground lamb (or substitute ground beef)
  3. 1 medium onion, chopped
  4. 1 tsp ground allspice
  5. 2 cups prepared fava beans
  6. 1 cup raw white basmati rice
  7. 2 cups water
  8. 1 tsp kosher salt
  9. Freshly ground black pepper to taste
  10. Fresh minced Cilantro to taste (optional)

How to make it

  1. Sauté onion in olive oil in a large pot.
  2. Add ground lamb and brown well
  3. Add rice, water, fava beans, salt and allspice
  4. Bring to a boil, cover and reduce heat. Cook about 20-30 minutes until rice is al denté and water has been absorbed.
  5. Taste and adjust salt if needed. Add black pepper and cilantro if using.
