Fava Beans with Lamb & Rice

This is simply seasoned and a very delightful one pot meal. 1 lb. fava pods = approx. 3/4 cup beans.
What you need
- Olive Oil
- 1 pound ground lamb (or substitute ground beef)
- 1 medium onion, chopped
- 1 tsp ground allspice
- 2 cups prepared fava beans
- 1 cup raw white basmati rice
- 2 cups water
- 1 tsp kosher salt
- Freshly ground black pepper to taste
- Fresh minced Cilantro to taste (optional)
How to make it
- Sauté onion in olive oil in a large pot.
- Add ground lamb and brown well
- Add rice, water, fava beans, salt and allspice
- Bring to a boil, cover and reduce heat. Cook about 20-30
minutes until rice is al denté and water has been
absorbed.
- Taste and adjust salt if needed. Add black pepper and
cilantro if using.
