Fresh Pea Soup

I like this a bit rustic, as they say, but you could puree it in a food processor for a more smooth finish.

What you need

  1. 4 cups fresh english peas
  2. 2 cups vegetable broth
  3. 2 tsp fresh mint, minced
  4. 1 tbl fresh parsley, minced
  5. 1 tbl olive oil
  6. 1 large garlic clove, minced
  7. 2 scallions, chopped
  8. Sun Dried Tomato Oil or Basil Oil
  9. Mascarpone cheese

How to make it

  1. In a saucepan over medium heat olive oil
  2. Add garlic and cook 1 minute
  3. Add vegetable broth and bring to a simmer
  4. Add peas, mint and parsley
  5. Cook until peas are soft
  6. Using a potato masher to mash the peas into the broth
  7. Add scallions and serve in individual bowls topped with a tablespoon of Mascarpone cheese and a drizzle of sun dried tomato oil
