Italian Style Meatloaf

What you need

  1. 1 1/4 - 1 1/2 lbs ground beef
  2. 1/4 - 1/3 lb sweet italian bulk sausage with fennel
  3. 1 onion, finely diced
  4. 1/4 cup red bell pepper, finely diced
  5. 1 stalk celery, finely diced
  6. 2-4 cloves garlic, minced
  7. Simple Marinara sauce made with tomato paste
  8. 1 tbl worcestershire sauce
  9. 1 tsp dried crushed basil leaf
  10. Kosher salt
  11. Ground black pepper
  12. Olive oil

How to make it

  1. Preheat oven to 350º
  2. Heat 1 tbl olive oil in a skillet over medium heat
  3. Add onion, bell pepper and celery
  4. Sauté with 1/2 tsp salt until translucent and beginning to brown - add a small amount of water if it browns too quickly
  5. Add minced garlic and stir to combine
  6. Turn off heat and allow to cool slightly
  7. In a large bowl combine ground beef and ground sausage distributing the sausage well
  8. Add 1/2 the onion mixture, 1/3 cup marinara sauce, worcestershire, 1/2 tsp salt, 1 tsp ground black pepper and dried basil and gently combine well
  9. Brush a bit of olive oil in the bottom of a 7 x 11 x 2 inch baking dish
  10. Place meatloaf mixture into the dish and form into a loaf that is level on top - about 2 inches high
  11. Spoon remaining onion mixture around the edges and drizzle all with olive oil
  12. Grind lots of black pepper over the top and bake for 30 minutes
  13. After 30 minutes, spoon some marinara sauce all over the top and reverse the pan inside the oven
  14. Continue baking for another 30 minutes until meat is done in the middle
  15. Serve with the remaining marinara sauce
