Lemon Chess Pie
This is the easiest pie recipe I have ever made.
What you need
- 1 recipe single crust pie pastry
- 2 cups sugar
- 2 tbl cornmeal
- 1 tbl flour
- 4 eggs
- 1/4 cup melted butter
- 1/4 cup milk
- 1/4 cup lemon juice
- Zest from 2 lemons
How to make it
- Preheat oven to 375º
- Combine sugar, cornmeal and flour
- Add eggs one at a time, mixing well
- Add butter, milk, lemon jiuce and lemon zest and combine well
- Pour into unbaked pie crust - cover crust edges with foil
- Remove foil for the last 15-20 minutes to brown
- Bake for a total of 45 minutes, until knife inserted in center comes out clean
I use Pillsbury Pie Crusts that I purchase in the refrigerator section, rather than make the pastry from scratch.
