Lentil Taco Salad
We use this lentil mixture for real tacos as well, but it makes a very
nice salad. I like two of Trader Joes salsas for taco salad. One is a
bottled red medium salsa and the other is the fresh roasted tomato salsa.
Get extra and serve with some blue corn chips.
What you need
- 1 cup lentils
- 2 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tbl chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp hot chili flakes
- 2 cups chopped cabbage
- 1 cups chopped iceburg lettuce
- 2 carrots shredded
- 1 diced avocado
- 2 cups grape or cherry tomatoes
- 2 green onions, sliced
- Fresh corn kernels (optional)
- 1/2 cup fresh chopped cilantro
- Favorite salsa for dressing
How to make it
- Cook lentils with spices in vegetable broth until done -
follow package instructions
- Combine cabbage, lettuce and shredded carrot
- Add avocado, tomatoes, onion, corn and cilantro
- Place cabbage mixture onto a serving platter and top with
lentils
- Serve with salsa on the side for dressing
