Lentil Tomato Soup

*Sumac is a middle eastern spice that is available online. It is red and used as a condiment in many dishes. It is sour so if you don't want to add this to your spice box, put about 1 teaspoon of fresh lemon juice into each soup bowl when you serve.

What you need

  1. 1 cup puy lentils (green french lentils)
  2. 6 cups low fat, low sodium broth
  3. 15 oz. tomato sauce (no sugar such as Muir Glen)
  4. Olive oil
  5. 1 large onion, chopped
  6. 4 cloves garlic, minced
  7. 2 tsp ground cumin
  8. 1 tsp crushed red pepper flakes
  9. 1 tsp spanish sweet paprika
  10. fresh coriander, stems minced and leaves coarsely chopped
  11. *Sumac and non-fat, plain greek yogurt for garnish

How to make it

  1. Rinse lentils, add to broth and heat to boiling
  2. Reduce heat and simmer until lentils are just tender - 20-30 minutes
  3. Meanwhile, sauté onion over medium low heat until softened
  4. Add spices to onion and continue to cook over low heat for several minutes
  5. Add garlic to onion/spice mixture and heat until very fragrant
  6. Remove from heat and set aside
  7. When lentils are just tender, add tomato sauce, cilantro and onion mixture
  8. Increase heat to medium and allow to cook about 10 minutes for flavors to incorporate
  9. Turn off heat and allow to cool slightly before serving
  10. Garnish with a tablespoon of yogurt and sprinkled sumac (or optional lemon juice)
