Mahi Mahi with Crab & Spinach

What you need

  1. 12 - 16 oz Mahi Mahi fillets, cut into 3-4 inch pieces
  2. 3/4 - 1 cup lump crab meat
  3. 1 1/2 cups cooked spinach
  4. 1 tbl minced red bell pepper
  5. 2 tbl minced shallot
  6. 4 tbl grated romano cheese
  7. grated nutmeg to taste
  8. 1 egg, beaten
  9. 2-3 tbl cream or milk
  10. Kosher salt & Fresh ground black pepper
  11. Olive Oil

How to make it

  1. Preheat oven to 400º
  2. Salt & pepper both sides of fillets
  3. Brush a baking dish with olive oil and add fish fillets, turning to coat with oil
  4. Press out any liquid from spinach and break it up (should be fairly dry)
  5. In a bowl combine spinach, crab, bell pepper, shallot, 2 tbl romano cheese and nutmeg
  6. Combine well, trying not to break up the crab too much
  7. Add egg and enough cream to make a soufflé like consistency
  8. Divide the crap mixture evenly on top of each fillet
  9. Sprinkle tops with remaining cheese
  10. Bake 30 minutes (depending on thickness of fillets) until fish is cooked
