Mahi Mahi with Crab & Spinach
What you need
- 12 - 16 oz Mahi Mahi fillets, cut into 3-4 inch pieces
- 3/4 - 1 cup lump crab meat
- 1 1/2 cups cooked spinach
- 1 tbl minced red bell pepper
- 2 tbl minced shallot
- 4 tbl grated romano cheese
- grated nutmeg to taste
- 1 egg, beaten
- 2-3 tbl cream or milk
- Kosher salt & Fresh ground black pepper
- Olive Oil
How to make it
- Preheat oven to 400º
- Salt & pepper both sides of fillets
- Brush a baking dish with olive oil and add fish fillets, turning to coat with oil
- Press out any liquid from spinach and break it up (should be fairly dry)
- In a bowl combine spinach, crab, bell pepper, shallot, 2 tbl romano cheese and nutmeg
- Combine well, trying not to break up the crab too much
- Add egg and enough cream to make a soufflé like consistency
- Divide the crap mixture evenly on top of each fillet
- Sprinkle tops with remaining cheese
- Bake 30 minutes (depending on thickness of fillets) until fish is cooked
