Meat Sauce for Spaghetti
This would be good with any type of meat; beef, pork, turkey, chicken, sausage. It so happens a friend brings us lots of home grown, lean ground beef, so that's what I use.
What you need
- 1 1/4 lb lean ground meat
- 1/2 medium onion, finely minced
- 1/4 red bell pepper, finely minced
- 3/4 lb crimini mushrooms, sliced
- 2-4 garlic cloves, minced
- 1 - 28 oz can Muir Glen crushed tomatoes
- 1 Tbl Muir Glen tomato paste
- 1 1/2 cups dry red wine
- 2 cups water
- 1/2 tsp each ground oregano and basil
- 1/4 tsp ground thyme
- 4 Tbl fresh minced basil leaves
- 2 1/2 tsp kosher salt or to taste
How to make it
- Cook ground beef with 1/2 tsp kosher salt until no longer pink
- Add onion and bell pepper and another 1/2 tsp salt - cook until onion is translucent
- Add mushrooms and 1/2 tsp salt - cook until wilted and there is a light sauce in the bottom
- Add garlic, stir and add tomato paste - stir to combine tomato paste thoroughly
- Add red wine and stir until blended
- Add crushed tomatoes, water, dried herbs, 1 tsp salt and 2 tbl fresh minced basil leaves
- Bring to a boil, reduce heat to low and simmer for 1 hour
- Turn off heat and taste to adjust seasonings
- Add remaining 2 Tbl minced basil and serve hot over pasta
