Making your own pasta is easier than you imagine. It's nice to be able to create your own recipes and it's also a fun way to involve children or guests in the meal preparation. Everyone loves pasta! You should have a hand-crank pasta machine. They typically sell between $35 and $45. They are not at all hard to use and make the process very fast and simple. Most come with cutting attachments for linguini, but cutting freehand is just as nice. You may also want an edge sealer for ravioli, although you can use the tines of a fork. Plain pastas are great for experimenting with sauces. You can be very clever with very few ingredients; olive oil, butter, garlic, herbs, etc. Filled pasta such as ravioli require a fairly firm and dry filling, but are exceptionally simple to make. Make small batches at first until you get to know how things cook and find some basic recipes you enjoy. I have a white pasta and whole wheat pasta recipe here that both work well for me, but there are many available online or in italian cookbooks. |
