Salmon Casserole

Use your favorite Tuna Casserole recipe and substitute an equal amount of Trader Joes canned Red Salmon or use the recipe below. This is also perfect for leftover salmon.

What you need

  1. 1 can Trader Joe's Red Salmon
  2. 1/2 lb bowtie pasta
  3. 16 oz. hot vegetable broth
  4. 2 tbl soybean margarine or butter
  5. 2 tbl flour
  6. Salt & Pepper
  7. Fresh herb (optional)

How to make it

  1. Cook pasta in boiling water until just barely done.
  2. In a sauce pan, melt margarine over medium heat.
  3. When margarine foams, add flour and stir until very well blended.
  4. Add a small amount of broth and whisk until no lumps remain.
  5. Continue adding broth and whisking briskly to keep from lumping, until all broth is incorporated.
  6. Heat sauce until it is thickened and season with salt & pepper.
  7. Remove salmon from can. Gently peel off skin and remove any hard bones. (Most of the bones in canned salmon are very gelatinous and don't need to be removed.)
  8. In a large bowl, incorporate salmon into pasta. Add fresh herb.
  9. Pour sauce over pasta and mix well.
  10. Pour into a greased baking dish, cover and place into a 350 oven for approximately 35 minutes.

The bright red salmon makes this a much prettier dish than plain old tuna casserole, and the flavor is more vibrant. Alternatively, you could use leftover salmon for this very successfully.

I try to have a group of recipes without dairy products and have developed this version of vegetable gravy to replace canned soups in dishes. You could use canned soup in place of the vegetable broth, margarine and flour. You can also add chopped celery and onion for additional flavor and crunchiness. The addition of a can of green peas is also a very nice variation.
