Penne with Prosciutto

What you need

  1. 1/2 lb penne pasta
  2. 1 Tbl butter
  3. 1 cup sliced mushrooms
  4. 3 oz. prosciutto or 3/4 cup cut up
  5. 1/4 cup pine nuts
  6. 1 tsp garlic, chopped
  7. 1/4 cup brandy
  8. 2 cups heavy cream
  9. 3/4 cup parmesan cheese
  10. 1/3 cup chopped fresh parsley

How to make it

  1. Cook pasta in boiling water for 4 minutes. Drain.
  2. In a large sauté pan, melt butter over medium heat.
  3. Add prosciutto and mushrooms. Cook 2 minutes.
  4. Add pinenuts and garlic. Cook 2 minutes or less, until garlic is fragrant.
  5. Add brandy, remove from heat and ignite.
  6. Return to heat and shake pan until flame is extinguished.
  7. Add cream and stir until it just begins to boil.
  8. Add pasta and simmer until pasta is cooked. (About 5 minutes.)
