Turkey with Swiss Chard Pasta

What you need

  1. 1 1/4 lb. ground turkey
  2. 4 cups shredded swiss chard
  3. 1 medium onion, chopped
  4. 2 cups chopped fresh tomatoes, or 1 14oz. can diced tomatoes
  5. 1 6oz. can tomato paste
  6. 1 cup white wine
  7. 1 cup chicken broth, vegetable broth or water
  8. 4 cloves fresh garlic, minced
  9. 1/2 tsp hot red pepper flakes
  10. 1/2 cup fresh basil, chopped
  11. Salt & Pepper
  12. 3/4 lb. thin whole wheat spaghetti

How to make it

  1. Brown turkey in a large pot
  2. Add onion, red pepper flakes and 1/2 tsp salt - cook until onion is soft
  3. Add garlic and tomato paste
  4. Add chopped tomatoes, white wine and broth
  5. Bring to a low boil, reduce heat and simmer to desired consistency
  6. (you can thin with more broth or wine if desired)
  7. Cook pasta to al dente according to package directions
  8. Adjust seasonings for sauce and serve over pasta
