Quick Spaghetti for One

This is one of my favorite lunches. It's fast and very warming on a cool day. To tell how much a single serving of dried pasta is, read the total number of servings in the package and eyeball the amount to make one serving. (If it says 7 servings, use about 1/7th of the package.)

What you need

  1. One serving dried spaghetti, whole grain or whole wheat
  2. 1 tbl tomato paste (no sugar added)
  3. 1 small garlic clove, grated
  4. pinch crushed red pepper flakes
  5. Olive oil

How to make it

  1. Heat water for pasta
  2. When boiling, add 1 1/2 tsp kosher salt and pasta
  3. Cook 5 minutes, reserve about 1/4 cup cooking water, drain pasta and set aside
  4. In pasta pot, heat olive oil over medium low heat
  5. Add tomato paste, garlic and pepper flakes
  6. Stir to combine well and cook for 3-4 minutes until tomato paste is very sweetly fragrant
  7. Add 1/4 cup pasta cooking water and stir until smooth
  8. Add pasta and reduce heat to low
  9. Stir to coat pasta well and turn off heat
  10. Let stand about 2 minutes, then.....dive in!
