Quick Spaghetti for One
This is one of my favorite lunches. It's fast and very warming on a cool day. To tell how much a single serving of dried pasta is, read the total number of servings in the package and eyeball the amount to make one serving. (If it says 7 servings, use about 1/7th of the package.)
What you need
- One serving dried spaghetti, whole grain or whole wheat
- 1 tbl tomato paste (no sugar added)
- 1 small garlic clove, grated
- pinch crushed red pepper flakes
- Olive oil
How to make it
- Heat water for pasta
- When boiling, add 1 1/2 tsp kosher salt and pasta
- Cook 5 minutes, reserve about 1/4 cup cooking water, drain pasta and set aside
- In pasta pot, heat olive oil over medium low heat
- Add tomato paste, garlic and pepper flakes
- Stir to combine well and cook for 3-4 minutes until tomato paste is very sweetly fragrant
- Add 1/4 cup pasta cooking water and stir until smooth
- Add pasta and reduce heat to low
- Stir to coat pasta well and turn off heat
- Let stand about 2 minutes, then.....dive in!
