Baked Manicotti

What you need

  1. Pre formed Manicotti/Canneloni noodles
  2. 1 recipe basic tomato sauce
  3. Olive Oil
  4. 1/2 cup grated Parmesan Cheese, divided
  5. 1 lb ricotta cheese
  6. 1 egg
  7. Freshly grated nutmeg
  8. Salt & Pepper
  9. 1 10 oz. pkg frozen spinach, cooked, drained well and chopped lightly

How to make it

  1. Prepare pasta according to package directions
  2. Oil the bottom of a baking dish
  3. Combine ricotta, egg, 1/4 cup parmesan, nutmeg, salt & pepper and spinach
  4. Spread a thin layer of tomato sauce over the bottom of the baking dish
  5. Fill pasta tubes and place in a single layer in the dish
  6. Pour remaining tomato sauce evenly over the filled pasta
  7. Sprinkle with parmesan cheese
  8. Bake at 350 for about 20 minutes or until hot
