Baked Manicotti

Very elegant company casserole.

Pre formed Manicotti/Canneloni noodles
1 recipe basic tomato sauce
Olive Oil
1/2 cup grated Parmesan Cheese, divided
1 lb ricotta cheese
1 egg
Freshly grated nutmeg
Salt & Pepper
1 10 oz. pkg frozen spinach, cooked, drained well and chopped lightly
  • Prepare pasta according to package directions
  • Oil the bottom of a baking dish
  • Combine ricotta, egg, 1/4 cup parmesan, nutmeg, salt & pepper and spinach
  • Spread a thin layer of tomato sauce over the bottom of the baking dish
  • Fill pasta tubes and place in a single layer in the dish
  • Pour remaining tomato sauce evenly over the filled pasta
  • Sprinkle with parmesan cheese
  • Bake at 350 for about 20 minutes or until hot
