Spinach Cheese Pasta

What you need

  1. 8 oz. egg noodles (or other leftovers)
  2. 1 Tbl. oil
  3. 1 large clove garlic, minced
  4. 1 10 oz. pkg. frozen, chopped spinach, thawed & drained
  5. 2 tsp. fresh basil, minced (or 1/2 tsp. dry)
  6. 1/4 cup fresh parsley, minced (or 1 Tbl dry)
  7. 1 cup low-fat cottage cheese (or part-skim ricotta)
  8. 1/4 tsp. salt
  9. Freshly ground black pepper
  10. 2 Tbl. grated parmesan

How to make it

  1. Sauté oil, garlic, spinach for 5 minutes.
  2. Add remaining ingredients, parmesan last.
  3. Pour mixture over noodles and toss.

Leftover noodles can be reheated by pouring boiling water over them.
