Spaghetti with Fava Beans and Chard

What you need
- 3/4 lb. whole wheat or whole grain spaghetti
- 1 1/2 - 2 cups fresh prepared fava beans (see 'to prepare fava beans' here)
- 2-3 cups fresh small chard, stems and leaves chopped
- 1 medium onion, peeled, cut in quarters and thinly sliced
- 1 large garlic clove, minced
- 1/2 tsp crushed red pepper flakes
- 1/4 cup milk
- 2-4 tbl grated romano cheese
- 1/2 cup pasta cooking water (taken 2 minutes before pasta is done)
- Extra grated cheese and minced fresh parsley or oregano
How to make it
- Prepare pasta to al denté - reserve 1/2 cup pasta water - drain pasta
- Heat a large skillet over medium heat with olive oil and add onion - sauté until soft and beginning to brown
- Add garlic, red pepper flakes and chard - cook until chard is wilted
- Combine favas, milk, grated romano and pasta water - add to skillet
- Cook 2-3 minutes
- Add pasta and mix well
