Spaghetti with Fava Beans and Chard

Read about fava beans.

What you need

  1. 3/4 lb. whole wheat or whole grain spaghetti
  2. 1 1/2 - 2 cups fresh prepared fava beans (see 'to prepare fava beans' here)
  3. 2-3 cups fresh small chard, stems and leaves chopped
  4. 1 medium onion, peeled, cut in quarters and thinly sliced
  5. 1 large garlic clove, minced
  6. 1/2 tsp crushed red pepper flakes
  7. 1/4 cup milk
  8. 2-4 tbl grated romano cheese
  9. 1/2 cup pasta cooking water (taken 2 minutes before pasta is done)
  10. Extra grated cheese and minced fresh parsley or oregano

How to make it

  1. Prepare pasta to al denté - reserve 1/2 cup pasta water - drain pasta
  2. Heat a large skillet over medium heat with olive oil and add onion - sauté until soft and beginning to brown
  3. Add garlic, red pepper flakes and chard - cook until chard is wilted
  4. Combine favas, milk, grated romano and pasta water - add to skillet
  5. Cook 2-3 minutes
  6. Add pasta and mix well
