Special Meatloaf
What you need
- 1 1/2 - 2 lbs ground beef
- 1 stalk celery, diced
- 1 medium onion, diced
- 1/4 cup red pepper, diced
- 3 cloves garlic, minced
- 2 large eggs
- 2 tbl thyme leaves, minced
- 1/2 cup minced parsley
- 1 teaspoon salt
- ground black pepper
- 1 Tbl Dijon mustard
- 2 teaspoons Worcestershire sauce
- a few dashes hot sauce
- 1 8 oz. can tomato sauce or ketchup
- 4 tbl brown sugar
- 4 tbl apple cider vinegar
How to make it
- Preheat oven to 350»
- In a skillet, saute onion, celery, garlic and pepper until onion is transparent
- Remove from heat and allow to cool slightly
- In a large bowl combine ground beef, thyme, parsley, salt and pepper
- Mix eggs, mustard, worchestershire and hot sauce together and add to beef
- Form into a loaf and place in a baking dish
- Combine tomato sauce, brown sugar and vinegar and spoon half over the meatloaf
- Bake for about 1 - 1 1/4 hours until done
- Serve with remaining sauce
