Dressed Up Meatloaf

1 1/2 - 2 lbs ground beef
1 stalk celery, diced
1 medium onion, diced
1/4 cup red pepper, diced
3 cloves garlic, minced
2 large eggs
2 tbl thyme leaves, minced
1/2 cup minced parsley
1 teaspoon salt
ground black pepper
1 Tbl Dijon mustard
2 teaspoons Worcestershire sauce
a few dashes hot sauce
1 8 oz. can tomato sauce or ketchup
4 tbl brown sugar
4 tbl apple cider vinegar
  • Preheat oven to 350
  • In a skillet, saute onion, celery, garlic and pepper until onion is transparent
  • Remove from heat and allow to cool slightly
  • In a large bowl combine ground beef, thyme, parsley, salt and pepper
  • Mix eggs, mustard, worchstershire and hot sauce together and add to beef
  • Form into a loaf and place in a baking dish
  • Combine tomato sauce, brown sugar and vinegar and spoon half over the meatloaf
  • Bake for about 1 - 1 1/4 hours until done
  • Serve with remaining sauce
