Fresh Mint Pesto

About 1 cup loosely packed fresh mint leaves
2 large cloves garlic, chopped
Juice of 1 lemon
Salt & Pepper
Olive Oil
  • Place the mint, garlic, lemon juice, salt & pepper into a food processor.
  • Pulse until combined
  • With processor running, drizzle in olive oil until pesto reaches desired consistency.

    This is excellent served over roasted asparagus. Also excellent as a summer dip for fresh vegetables or on pita bread.
