Fresh Mint Pesto

What you need

  1. About 1 cup loosely packed fresh mint leaves
  2. 2 large cloves garlic, chopped
  3. Juice of 1 lemon
  4. Salt & Pepper
  5. Olive Oil

How to make it

  1. Place the mint, garlic, lemon juice, salt & pepper into a food processor.
  2. Pulse until combined
  3. With processor running, drizzle in olive oil until pesto reaches desired consistency.

This is excellent served over roasted asparagus. Also excellent as a summer dip for fresh vegetables or on pita bread.
