Fresh Mint Pesto
What you need
- About 1 cup loosely packed fresh mint leaves
- 2 large cloves garlic, chopped
- Juice of 1 lemon
- Salt & Pepper
- Olive Oil
How to make it
- Place the mint, garlic, lemon juice, salt & pepper into a food processor.
- Pulse until combined
- With processor running, drizzle in olive oil until pesto reaches desired consistency.
This is excellent served over roasted asparagus. Also excellent as a summer dip for fresh vegetables or on pita bread.
